Our Grumpy Butcher Box all-natural reserve pork is cut, trimmed and prepared by using old-school culinary techniques, which significantly improve the product's marbling and brings you a pork chop that's more tender and juicy than an average supermarket pork. This time-consuming preparation means that our center cut bone in pork chop compares to even some of our most delicious cuts of steaks!
This cut comes from a hog breed known for its incredibly rich flavor profile, deeper red color and generous fat marbling meat, but the center of the loin cut is from the area with moderate fat marbling and without excessive connective tissue.
The hogs are raised on several east coast farms and allowed roam free, foraging on roots, nuts with a supplemental produce feed, coming from local farms. This well-balanced diet and free-range foraging, provide the meat with a more nutritional profile than most other commercially-raised pigs.
The end result is a tender, flavorful 16 oz pork chop and is enough for a hearty entree for two people.
Cooking this center cut bone-in chops is easy and can be done in several different ways, such as searing, grilling, air frying or baking. The bone helps to insulate the meat during cooking and to provide juicer and more tender texture. A simple fresh ground pepper and coarse salt rub is enough.
However, if you want to create a culinary masterpiece and impress your guests, prepare a dry rub with pepper, salt, Italian spice mix and some garlic, cover the meat in it and marinade for several hours. When it's time to cook, preheat the pan, reduce the temperature to medium heat and sear your chop for approximately 4-5 minutes per side, until the internal temperature is between 150 - 155 F and serve with some mashed or roasted potatoes.

BAKED PORK CHOP
- Defrost overnight in the refrigerator
- Remove from refrigerator 30 minutes before baking
- Pre-heat oven to 400F and Season both sides with olive oil, salt, pepper, oregano and paprika
- Bake in oven safe dish for 22-25 minutes or until internal temperature reaches 145-150F
- Remove from oven and allow to rest for 4-5 minutes on a warm serving plate
- Serve baked pork chops and become known as a culinary star!
